Guide to Cooking Oils

Just came across this handy guide to cooking oils put together by Whole Foods Market.

If you do a lot of cooking with oils, you’ll find the chart very helpful.

It shows a breakdown of the fats in each oil: saturated, monounsaturated, polyunsaturated, and superunsaturated omega-3.

This breakdown is displayed for 13 different refined cooking oils and 12 different unrefined cooking oils.

A word of caution: cooking destroys enzymes and nutrients. Better to eat raw foods and use raw oils, like extra virgin olive oil, for dressing.

Dr. Mercola explores this whole topic in even more depth. Based on his research, he says coconut oil is the best oil for cooking because it is the least susceptible oil to heat damage.
